Pineapple Dump Cake


My hubby comes from a long line of good cooks!  I’m so blessed to know them!  This recipe was handed down by his Aunt Linda.  It makes me think of Spring!  It’s super easy and yummy!  You’re going to want to serve it with ice cream to cut the sweetness!  *wink*

Pineapple Dump Cake

2 c. white sugar
2 c. all-purpose flour
2 eggs
1 t. vanilla
2 t. baking soda
1/4 t. salt
20 oz. can crushed pineapple (un-drained)

Dump (hence the name!) all ingredients in a large bowl and mix.  Bake in a 9×13 greased pan at 325 degrees for 40-50 minutes.  Ice while hot!!

Icing
Mix together the following:
8 oz. cream cheese, softened
3/4 stick of butter, softened
2 t. lemon juice
2 c. confectioners sugar
1/2 t. vanilla
